To start with I thought that I would cheer you all up! At the point of sending this email out at precisely 11.45am on Friday 23rd October, that there are just 62 days, 12 hours and 15 minutes (or 5,400,900 seconds) until Christmas Day!!
I am always being asked what it is like to work in a busy commercial kitchen; is the language as flowery as Gordon Ramsay? do tempers boil over onto the six ring burner? do knives flash across the hot lights? the answer is no!
Of course, when we have to serve upwards of 100 people with Sunday lunch, life can get a trifle pressured, but as long as we keep our heads and talk to each other we get through. Preparation is the key, and as we make almost everything in house, and cook most meals to order, we have to ensure that our preparation is excellent.
To help you understand the delicate balance between the chefs and the waiters I present a film clip of the less than ideal nature of this relationship. I wanted to make this the White Horse training video, but I was persuaded otherwise.
